Soup for the SoulI've been feeling a little under the weather this week so I looked through my stash of vegan recipe books and found this super simple Thai soup. It literally takes twenty minutes to make and it's full of different flavors- hot, sweet, spicy, and salty...Ingredients:1/2 cup chopped veggies of choice (mushrooms, purple cabbage, carrots, fennel, zucchini)2 tablespoons chopped cilantro2 cups hot water1 tablespoon red miso1 tablespoon agave nectar1 tablespoon lime juice1/2 teaspoon smashed garlica few drops of sesame chili oil Directions:Prepare all veggies and heat a kettle of water. Place miso into a pot and add a little hot water to dissolve the miso. Add lime juice, agave nectar, and smashed garlic. Then add the rest of your hot water. Stir well and add all veggies and allow to cook. Taste and adjust the sweet, sour, salty flavors, if needed. Add a few drops or more of sesame chili oil. Serves 1.
