Easy Lunch
qui2I love whipping up things that aren't complicated and include very simple ingredients. One of my favorite go-to recipes for lunch is quinoa tabbouleh. It is super easy to make and most importantly, it's healthy. I like it with pita bread, avocado, flax crackers, hummus, on top of a salad, or paired with grilled vegetables...qui3qui1Ingredients:1/2 cup quinoa cooked and cooled2 tablespoons garlic olive oil2 tablespoons lemon juice1/4 teaspoon salt1 tomato diced1/2 cucumber diced1 bunch green onions chopped1/2 cup fresh parsley choppedcrushed pepper, add to taste
Directions:In a medium bowl, combine garlic olive oil, lemon juice, salt, cucumber, tomato, green onions and parsley. Stir in cooled quinoa and add crushed pepper to taste.
