lemon2lemon4lemon3lemon1Current favorite snack- "no bake" lemon coconut bites. Super easy to make (obviously), gluten-free, vegan and most importantly so damn good. I ate at least four after shooting this post. 
Ingredients:1 1/2 cups almond flour1 1/2 cups dried, shredded unsweetened coconut1/3 cup coconut flour1 1/2 teaspoons stevia powder (mixed with a bit of water)2 teaspoons vanilla extract1/4 cup lemon juice 1 tablespoon lemon zest1/3 cup coconut oil pinch of salt
Directions: Mix almond flour, shredded coconut, coconut flour and a pinch of salt. In a separate bowl, mix stevia powder and water, vanilla extract, lemon juice and lemon zest. Using an electric mixer, slowly stream wet ingredients into dry ingredients. Once combined, stream in melted coconut oil. Use a tablespoon to form dough into balls. Place cookies in fridge and wait at least 1-1.5 hours for dough to set.
