palm2I figured what better way to start off the week than with one of my new favorite recipes, right? This dish was inspired by the vegan ceviche at Sage Bistro. It's super easy to make and so delicious...palm1palm4palm3Ingredients:1 (14 oz) can hearts of palm2 large tomatoes (I used cherry tomatoes)1/2 small red onionhandful fresh cilantro1 jalapeno diced1/4 cup lime juice1 tablespoon olive oilsaltpepper
Chop hearts of palm, tomatoes, red onion, cilantro, and jalapeno. Throw all chopped vegetables into a medium bowl then add the lime juice, olive oil, salt, and pepper. Stir well and serve with on a tostada with avocado! xx
